The latest addition to our Japanese food scene serves the famed fugu!

Fans of the celebrated yet notorious pufferfish or fugu (河豚) will soon be able to indulge in it at GUENPIN. The fugu and crab specialist has more than 100 restaurants in Japan and will be opening its first store outside of the country on 20 April’17.

WAttention Singapore takes a first glimpse of the restaurant and lists down FIVE reasons why GUENPIN should be your new favourite Japanese restaurant:

You will be able to try The Exquisite and exclusive torafugu (トラフグ, tiger puffer fish).

Torafugu is the most prestigious of the edible species, and GUENPIN uses original methods to age the fish before serving them. This results in richer and more intense flavours in the meat which are especially apparent when eating fugu sashimi.

Fugu sashimi is also known as ‘tessa’ (てっさ).

The slices here are a tad thicker than usual as the chef wants diners to enjoy the slightly crunchy texture and taste of the fish. The tangy homemade ponzu (ポン酢, citrus-based soy sauce) perfectly complements the clean flavour of every slice.

The juicy deep-fried fugu is also extremely popular in Japan.

Plenty of collagen to ensure supple skin and youthful looks

Torafugu contains a large amount of collagen, which is known to reduce joint pain and degeneration among other benefits such as improving the health of skin and hair.

Eaten as nabe (鍋, Japanese-style hot pot), the pufferfish pieces are extremely bouncy in texture yet tender as well.

GUENPIN suggests scooping the ingredients straight into the ponzu bowl so they remain soaked in the sauce. This is one of my favourite ways to enjoy fugu, as the broth mellows out the concentrated dipping sauce. After all the ingredients have been spooned out, pre-cooked rice mixed with a beaten egg is added to the remaining broth to make zosui (雑炊). The simple yet heart-warming comfort dish was a great way to end off the delicious hot pot.

the crab is incredible (ノ・ω・)ノ

No words can do the zuwai gani (ズワイガニ, snow crab) tempura justice. Sinking my teeth into the light, crisp batter which gave way to tender, juicy crab was one of the most enjoyable food experiences I have ever had. The snow crab served here is loaded with umami notes and has a distinctly sweet taste which appeals to the palate. Already great on its own, the burst of flavour when eaten with a dash of mountain salt makes this an unbeatable dish. This is a definite MUST-EAT!

 wide range of sake pairings

More than 30 types of alcohol including sake, shochu, wine and beer are available at GUENPIN. The large selection of sake varies from the sweet to the dry, so you will surely be able to find the perfect match for your taste buds. There is also a bar counter at the restaurant so you can swing by for a casual drink anytime. For the more adventurous, try hirezake (ひれ酒), where the fin of the fugu is grilled over a flame until charred and then put into a cup of hot sake to steep.
